Family's Best Date Nut Bread


         I feel like before I ever tasted date nut bread, I thought it was gross. I'll have a double chocolate chip muffin instead please....Like what the heck is a date anyways? Well according to nutrition-and-you.com, they are "sweet, delicious fruits from the tropical oasis, brimming with much needed minerals and energy to help keep you fit and healthy." Well, I'm sold....but if that description isn't enough to convince you, then you must try this bread. It's sooooooo moist and sweet and the dates add a flavor that really cannot be replicated. Plus the crunchy walnuts - yes, this is most definitely one of my favorites.



            It's a family recipe that has been passed down for years - and I'm confident in saying it's perfect. It is delicious, and the best part about it is that it only uses 3 tbsp of butter - not loads of oil or a whole stick of butter like most other quick bread recipes! You would never believe that after taking a bite of this. 



            It is so good it's dangerous.... I couldn't stop eating it. Like I really couldn't stop myself....ahh it's really so good. My mom knows the feeling, we each cut off a piece every time we walk by the kitchen. This is a recipe I will be using forever, and I probably wont change it at all. It's great just how it is. 

           So please, if you ever have the desire to make date nut bread (as a college kid you might never, but if this post did anything to change your mind....) USE THIS RECIPE! I promise you it is so delicious! 




Family's Best Date Nut Bread
Ingredients:
1 pkg dates - 8oz
1 1/2 cups boiling water
3 Tbsp butter
2 1/2 cup flour
1 cup sugar
1 tsp baking soda
1 tsp baking powder
1/4-1/2 tsp salt
1 egg
3/4 cup walnuts, chopped
1 tsp vanilla

Directions:
Preheat oven to 350 degrees. Chop dates and put them in a small bowl with boiling water and butter and let sit, while you mix the flour, sugar, baking soda, baking powder and salt in a large bowl. Mix together the eggs, walnuts and vanilla in a separate bowl. Add the egg mixture and the date/water mixture to the flour mixture and fold until just incorporated, do not over mix. Bake in preheated oven for 55-60 minutes or until inserted toothpick comes out clean.
